Yet another great addition to the dining scene at Hong Kong’s Knutsford Terrace in Tsim Sha Tsui is Hanabi Omakase Bar by Prive Group.  Sourcing the freshest ingredients from Japan daily, Executive Chef Michael Chan, previously of Café Kool and NOBU Intercontinental Hong Kong, fuses his signature subtle Japanese cuisine with an artistic fusion touch.  Two omakase menus are served at Hanabi-the Tsubomi menu, which stands for flower bud as well as the Mankai menu, which stands for in full bloom. The Tsubomi menu features a daily special appetizer, creative sashimi, seasonal tempura and creative sushi while the Mankai menu includes an extended selection of creative sushi in addition to a miso soup and grilled seasonal dish.  We loved the beautifully marinated burdock in the appetizer as well as the creatively plated oysters paired with chewy red and green seaweed and white fish with yuzu.  The silky and creamy sea urchin sushi is highly addictive as well.  We can’t wait to be back to this cozy omakase bar which by the way only seats 18 guests in the form of a sushi bar where guests can watch all the detail that goes into preparing each dish, from the precise cutting skills of the chef to the beautiful glistening Himalayan rock salts that add a special touch to the fresh sashimi and sushi, while enjoying the friendly conversation with Chef Michael.  Be sure to book your seat fast!
